- 1/2 cup butter, melted
- 2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 teaspoon ground cinnamon
- 1 quart vanilla ice cream, softened
- 1/2 cup mini semisweet chocolate chips
- 1/2 cup chopped walnuts or pecans (optional)
- Preheat oven to 350°F. Grease a 9-inch springform pan.
- In a medium bowl, stir together melted butter, graham cracker crumbs, sugar and cinnamon.
- Press mixture into the bottom of the prepared pan.
- Bake for 10 minutes.
- Remove from oven and cool completely.
- Spread softened ice cream over cooled crust. Sprinkle with chocolate chips and nuts (if desired). Cover and freeze for at least 6 hours or overnight.
- To serve, remove sides of pan. Slice cake into wedges and serve immediately.
