Cookie Crumble Pie
Ingredients
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup butter, softened
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract

Steps
  1. Preheat oven to 350°F.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda and salt.
  3. In a large bowl, beat butter and brown sugar with an electric mixer until light and fluffy.
  4. Add egg and vanilla; beat until combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix just until combined.
  6. Press dough into an ungreased 9-inch pie plate.
  7. Bake for 18-20 minutes or until golden brown.
  8. Cool completely before serving.
