Ingredients
  • 1 can full-fat coconut milk, chilled
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

  1. Refrigerate a can of full-fat coconut milk for at least 8 hours or overnight.
  2. Open the can of coconut milk and scoop out the hardened cream into a medium bowl. Discard the liquid.
  3. Add powdered sugar and vanilla extract to the bowl and beat with an electric mixer on high speed until light and fluffy.
  4. Serve immediately or store in an airtight container in the refrigerator for up to 5 days.
