Ingredients
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup sweetened flaked coconut

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  2. In a medium bowl, cream together the butter and sugar until smooth. Beat in the vanilla. Combine the flour and salt; stir into the creamed mixture until blended. Mix in coconut.
  3. Drop dough by rounded teaspoonfuls onto prepared cookie sheets. Flatten each cookie with a fork dipped in sugar.
  4. Bake for 12 to 15 minutes in preheated oven, or until golden brown. Cool slightly on the pans before transferring to wire racks to cool completely.
