Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium bowl, cream together the butter and sugar until smooth. Beat in the vanilla. Combine the flour and salt; stir into the creamed mixture until blended. Mix in coconut.
Drop dough by rounded teaspoonfuls onto prepared cookie sheets. Flatten each cookie with a fork dipped in sugar.
Bake for 12 to 15 minutes in preheated oven, or until golden brown. Cool slightly on the pans before transferring to wire racks to cool completely.
