Coconut Rice
Ingredients
  • 1 1/2 cups uncooked white rice
  • 1 can (14 ounces) coconut milk
  • 1 cup water

Steps
  1. In a medium saucepan, combine rice, coconut milk and water.
  2. Bring to a boil over medium-high heat.
  3. Reduce heat to low and cover. Simmer for 20 minutes.
  4. Fluff with a fork before serving.
