Coconut Pudding
Ingredients
  • 3 cups coconut milk
  • 1/2 cup white sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract

Steps
  1. In a medium saucepan, whisk together the coconut milk, sugar, cornstarch and salt.
  2. Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens.
  3. Remove from heat and stir in butter and vanilla.
  4. Pour into individual serving dishes. Chill for at least 3 hours before serving.
