- 3 cups coconut milk
- 1/2 cup white sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 tablespoon butter
- 1 teaspoon vanilla extract
- In a medium saucepan, whisk together the coconut milk, sugar, cornstarch and salt.
- Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens.
- Remove from heat and stir in butter and vanilla.
- Pour into individual serving dishes. Chill for at least 3 hours before serving.
