Ingredients
  • 1 1/2 cups heavy cream
  • 1/2 cup whole milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons unflavored gelatin powder
  • 3 tablespoons cold water
  • 1 can (14 ounces) coconut milk

Steps
  1. In a medium saucepan, combine the cream, milk and sugar. Bring to a simmer over medium heat, stirring occasionally. Remove from heat and stir in the vanilla extract.
  2. In a small bowl, whisk together the gelatin and cold water until combined. Let sit for 5 minutes to bloom.
  3. Add the bloomed gelatin to the cream mixture and stir until completely dissolved.
  4. Stir in the coconut milk.
  5. Pour into four 6-ounce ramekins or custard cups. Refrigerate for at least 4 hours before serving.
