Coconut Pancakes
Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg, lightly beaten
  • 1 cup coconut milk
  • 2 tablespoons butter, melted

Steps
  1. In a large bowl, whisk together the flour, sugar, baking powder and salt. Make a well in the center and add the egg, coconut milk and butter; mix until blended.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
