In a small bowl, sprinkle the gelatin over the cold water and let stand for 5 minutes.
In a medium saucepan, combine the coconut milk, sugar and salt. Heat over medium heat until just simmering. Remove from heat and stir in the gelatin mixture until dissolved.
Divide the mixture among 4 small ramekins or custard cups. Refrigerate for at least 3 hours or until set.
