- 1 can (14 oz) full-fat coconut milk
- 3/4 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- In a medium saucepan, combine the coconut milk and sugar over medium heat.
- Stir until the sugar is dissolved, about 5 minutes.
- Remove from heat and stir in the vanilla extract and salt.
- Transfer to a bowl and chill in the refrigerator for at least 4 hours or overnight.
- Process according to your ice cream maker's instructions.
- Serve immediately or transfer to an airtight container and freeze for up to 1 month.
