Coconut Milk Ice …
Ingredients
  • 1 can (14 oz) full-fat coconut milk
  • 3/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt

Steps
  1. In a medium saucepan, combine the coconut milk and sugar over medium heat.
  2. Stir until the sugar is dissolved, about 5 minutes.
  3. Remove from heat and stir in the vanilla extract and salt.
  4. Transfer to a bowl and chill in the refrigerator for at least 4 hours or overnight.
  5. Process according to your ice cream maker's instructions.
  6. Serve immediately or transfer to an airtight container and freeze for up to 1 month.
