- 3/4 cup chia seeds
- 1 can (13.5 oz) full-fat coconut milk
- 2 tablespoons pure maple syrup
- 1 teaspoon vanilla extract
- In a medium bowl, whisk together the chia seeds, coconut milk, maple syrup and vanilla until combined.
- Cover and refrigerate for at least 4 hours or overnight.
- Divide the pudding mixture among four glasses or jars. Top with your favorite fresh fruit and granola.
