Ingredients
  • 3/4 cup chia seeds
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract

Steps
  1. In a medium bowl, whisk together the chia seeds, coconut milk, maple syrup and vanilla until combined.
  2. Cover and refrigerate for at least 4 hours or overnight.
  3. Divide the pudding mixture among four glasses or jars. Top with your favorite fresh fruit and granola.
  4. Enjoy!
