Coconut Lime Cake
Ingredients
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lime zest
  • 1/2 cup coconut milk
  • 1 1/2 cups all-purpose flour

Steps
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time.
  4. Stir in the vanilla extract and lime zest.
  5. Mix in the coconut milk.
  6. Gradually stir in the flour until a smooth batter is formed.
  7. Pour batter into a greased 9x13 inch baking pan.
  8. Bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
