Coconut Ice Cream
Ingredients
  • 2 cans full-fat coconut milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Steps
  1. In a medium saucepan, combine the coconut milk, sugar and salt. Cook over medium heat, stirring constantly, until the mixture begins to boil.
  2. Reduce the heat to low and simmer for 5 minutes.
  3. Remove from heat and stir in the vanilla extract.
  4. Transfer the mixture to a bowl and chill in the refrigerator for 2 hours or until cold.
  5. Freeze in an ice cream maker according to manufacturer's instructions.
  6. Enjoy!
