- 2 cans full-fat coconut milk
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- In a medium saucepan, combine the coconut milk, sugar and salt. Cook over medium heat, stirring constantly, until the mixture begins to boil.
- Reduce the heat to low and simmer for 5 minutes.
- Remove from heat and stir in the vanilla extract.
- Transfer the mixture to a bowl and chill in the refrigerator for 2 hours or until cold.
- Freeze in an ice cream maker according to manufacturer's instructions.
