- 2 tablespoons vegetable oil
- 1 small onion, diced
- 1 cup frozen peas and carrots, thawed
- 2 cloves garlic, minced
- 3 cups cooked long-grain white rice
- 1/4 cup coconut milk
- 1 teaspoon sugar
- 1/2 teaspoon ground ginger
- 2 tablespoons soy sauce
- Heat the oil in a large skillet over medium heat. Add the onion and cook for 2 minutes. Add the peas and carrots and garlic and cook for 3 minutes.
- Add the cooked rice to the skillet. Stir in the coconut milk, sugar, ginger, and soy sauce. Cook for 5 minutes, stirring occasionally.
- Serve hot.
