Coconut Fried Rice
Ingredients
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 1 cup frozen peas and carrots, thawed
  • 2 cloves garlic, minced
  • 3 cups cooked long-grain white rice
  • 1/4 cup coconut milk
  • 1 teaspoon sugar
  • 1/2 teaspoon ground ginger
  • 2 tablespoons soy sauce

Steps
  1. Heat the oil in a large skillet over medium heat. Add the onion and cook for 2 minutes. Add the peas and carrots and garlic and cook for 3 minutes.
  2. Add the cooked rice to the skillet. Stir in the coconut milk, sugar, ginger, and soy sauce. Cook for 5 minutes, stirring occasionally.
  3. Serve hot.
