- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 tablespoons freshly grated ginger root
- 2 tablespoons red curry paste
- 1 teaspoon ground turmeric
- 3 cups vegetable broth
- 1 (13.5 ounce) can coconut milk
- 2 cups cubed sweet potatoes
- Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the garlic, ginger, curry paste and turmeric. Cook for 1 minute.
- Stir in the vegetable broth and coconut milk. Bring to a simmer.
- Add the sweet potatoes and simmer for 20 minutes or until tender.
- Serve hot.
