Coconut Curry Soup
Ingredients
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons freshly grated ginger root
  • 2 tablespoons red curry paste
  • 1 teaspoon ground turmeric
  • 3 cups vegetable broth
  • 1 (13.5 ounce) can coconut milk
  • 2 cups cubed sweet potatoes

Steps
  1. Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic, ginger, curry paste and turmeric. Cook for 1 minute.
  3. Stir in the vegetable broth and coconut milk. Bring to a simmer.
  4. Add the sweet potatoes and simmer for 20 minutes or until tender.
  5. Serve hot.
