Ingredients
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons coconut oil
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt

Steps
  1. Heat the coconut oil in a large skillet over medium-high heat. Add the shrimp and cook until just pink, about 2 minutes per side.
  2. Add the curry powder, cumin, turmeric, coriander, garlic powder and salt. Stir to coat the shrimp evenly.
  3. Remove from heat and let cool before assembling the dumplings.
  4. To assemble the dumplings: Take one wonton wrapper and place 1 teaspoon of the shrimp mixture in the center. Wet your finger with water and brush around all four edges of the wrapper. Fold in half to form a triangle shape, pressing down to seal all edges.
  5. Continue with remaining wrappers until all of the filling is used up. Place on a parchment lined baking sheet.
  6. Bake at 375 degrees F for 15-20 minutes until golden brown. Serve warm with your favorite dipping sauce.
