Coconut Curry Rice
Ingredients
  • 2 cups uncooked long grain white rice
  • 1 can coconut milk
  • 1/2 cup vegetable broth
  • 2 tablespoons red curry paste
  • 1 teaspoon salt

Steps
  1. In a large saucepan, combine the rice, coconut milk, vegetable broth, curry paste, and salt. Bring to a boil over medium-high heat.
  2. Reduce heat to low and simmer for 20 minutes or until the rice is tender.
  3. Serve hot.
