Coconut Curry Noo…
Ingredients
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cumin
  • 3 cups vegetable broth
  • 3/4 cup canned coconut milk
  • 2 tablespoons soy sauce
  • 2 cups cooked udon noodles

Steps
  1. Heat oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic, curry powder, ginger and cumin; cook for 1 minute.
  2. Add broth, coconut milk and soy sauce; bring to a boil. Reduce heat to low and simmer for 10 minutes.
  3. Add noodles and simmer for 2 minutes, or until heated through.
