Ingredients
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 3 cups vegetable broth or water
  • 1 cup dried red lentils, rinsed and drained
  • 1 can (14 ounces) light coconut milk

Steps
  1. Heat oil in a large saucepan over medium heat. Add onion and garlic; cook and stir until softened, about 5 minutes. Stir in curry powder, cumin, coriander and cayenne pepper; cook for 1 minute.
  2. Stir in broth or water and lentils. Bring to a boil over high heat; reduce heat to low. Simmer until lentils are tender, about 20 minutes.
  3. Stir in coconut milk; cook for 5 minutes more. Serve hot.
  4. Optional: Garnish with chopped fresh cilantro
