Coconut Curry Chiā€¦
Ingredients
  • 3 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 2 boneless skinless chicken breasts, cut into cubes
  • 1 (14 ounce) can coconut milk

Steps
  1. Heat oil in a large skillet over medium heat. Add onion and garlic; cook and stir until tender.
  2. Stir in ginger, curry powder, cumin, coriander, and cayenne pepper; cook for 1 minute.
  3. Add chicken; cook and stir until chicken is no longer pink in the center.
  4. Pour coconut milk over chicken mixture; bring to a boil. Reduce heat to low and simmer for 15 minutes or until sauce has thickened.
  5. Serve with cooked rice or naan bread.
