Ingredients
  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon salt
  • 1/4 cup coconut milk

Steps
  1. Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  2. Spread the cauliflower florets onto the baking sheet. Drizzle with olive oil and sprinkle with curry powder, turmeric, and salt.
  3. Bake in preheated oven for 25 minutes, stirring once halfway through cooking.
  4. In a small saucepan, heat coconut milk over medium heat until it starts to simmer. Add the roasted cauliflower and stir to combine.
  5. Serve warm.
