Ingredients
  • 1 cup dry lentils
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon curry powder
  • 1/2 teaspoon garam masala
  • 3 cups vegetable broth or water
  • 1 can coconut milk

Steps
  1. In a large pot over medium heat, add the lentils, onion, garlic, ginger, curry powder and garam masala. Cook for 5 minutes until the vegetables are softened.
  2. Add the broth or water and bring to a boil. Reduce heat to low and simmer for 15-20 minutes until the lentils are cooked through.
  3. Stir in the coconut milk and cook for an additional 5 minutes. Serve warm with rice or naan.
  4. Optional: Garnish with chopped cilantro before serving.
