- 1/2 cup white sugar
- 3 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 2 cups milk
- 3 egg yolks, beaten
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 1 (9 inch) pie crust, baked
- In a medium saucepan, combine the sugar, flour and salt.
- Stir in the milk and cook over medium heat, stirring constantly, until mixture thickens and boils.
- Boil for 1 minute.
- Remove from heat and stir a small amount of the hot mixture into the beaten egg yolks; return all to the saucepan.
- Cook 2 minutes more, stirring constantly.
- Remove from heat and stir in butter and vanilla.
- Pour into baked pastry shell.
- Chill until set. Serve with whipped cream or meringue if desired.
