Coconut Cream Pie
Ingredients
  • 1/2 cup white sugar
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups milk
  • 3 egg yolks, beaten
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1 (9 inch) pie crust, baked

Steps
  1. In a medium saucepan, combine the sugar, flour and salt.
  2. Stir in the milk and cook over medium heat, stirring constantly, until mixture thickens and boils.
  3. Boil for 1 minute.
  4. Remove from heat and stir a small amount of the hot mixture into the beaten egg yolks; return all to the saucepan.
  5. Cook 2 minutes more, stirring constantly.
  6. Remove from heat and stir in butter and vanilla.
  7. Pour into baked pastry shell.
  8. Chill until set. Serve with whipped cream or meringue if desired.
