- 2 cups coconut milk
- 1/4 cup chia seeds
- 1/4 cup shredded coconut
- 2 tablespoons honey or agave nectar (optional)
- 1 teaspoon vanilla extract (optional)
- In a medium bowl, whisk together the coconut milk, chia seeds, shredded coconut, honey or agave nectar (if desired), and vanilla extract (if desired).
- Cover and refrigerate for at least 4 hours or overnight.
