Coconut Chia Pudd…
Ingredients
  • 2 cups coconut milk
  • 1/4 cup chia seeds
  • 1/4 cup shredded coconut
  • 2 tablespoons honey or agave nectar (optional)
  • 1 teaspoon vanilla extract (optional)

Steps
  1. In a medium bowl, whisk together the coconut milk, chia seeds, shredded coconut, honey or agave nectar (if desired), and vanilla extract (if desired).
  2. Cover and refrigerate for at least 4 hours or overnight.
  3. Stir the pudding before serving. Serve chilled.
