Ingredients
  • 2 cups old-fashioned rolled oats
  • 1 cup raw cashews
  • 1/4 cup packed light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup coconut oil, melted
  • 2 tablespoons honey
  • 2 teaspoons pure vanilla extract
  • 3/4 cup unsweetened coconut flakes

Steps
  1. Preheat oven to 325°F. Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the oats, cashews, brown sugar, cinnamon, and salt.
  3. Add the coconut oil, honey, and vanilla extract. Stir until everything is evenly coated.
  4. Spread the granola onto the prepared baking sheet in an even layer.
  5. Bake for 20 minutes, stirring halfway through.
  6. Stir in the coconut flakes and bake for an additional 5-10 minutes or until golden brown.
  7. Let cool completely before serving.
