Coconut Brownies
Ingredients
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup flaked coconut

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 inch pan.
  2. In a large saucepan, melt 1/2 cup butter.
  3. Remove from heat, and stir in 1 cup sugar, 2 eggs, and 1 teaspoon vanilla.
  4. Beat in 1/2 cup flour, 1/3 cup cocoa, baking powder, and salt.
  5. Stir in 3/4 cup coconut.
  6. Spread batter into prepared pan.
  7. Bake for 25 to 30 minutes in the preheated oven. Brownies will appear soft when done.
  8. Let cool completely before cutting into squares.
