Coconut Brownie
Ingredients
  • 1/2 cup butter
  • 1/2 cup cocoa powder
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup all-purpose flour
  • 1/2 cup shredded coconut

Steps
  1. Preheat oven to 350°F (175°C). Grease an 8-inch square baking pan.
  2. In a medium saucepan, melt the butter over low heat.
  3. Remove from heat and stir in the cocoa powder and sugar until blended.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Mix together baking powder, salt, and flour; gradually stir into the cocoa mixture until blended.
  6. Stir in shredded coconut.
  7. Spread batter evenly into prepared pan.
  8. Bake 25 minutes in preheated oven or until a toothpick inserted into center of brownies comes out clean.
  9. Cool before cutting into squares.
