- 1/2 cup chia seeds
- 1/2 cup coconut milk
- 1/4 cup almond milk
- 1/4 teaspoon vanilla extract
- 1 ripe avocado, mashed
- 3 tablespoons honey
- In a medium bowl, stir together the chia seeds, coconut milk, almond milk, and vanilla extract. Cover and refrigerate for at least 2 hours.
- In a separate bowl, mash the avocado until it’s a smooth paste.
- Stir in the honey and mix until everything is combined.
- Remove the chia pudding from the refrigerator and add the avocado mixture. Stir until everything is combined.
- Cover and refrigerate for at least 4 hours or overnight.
- Serve chilled with desired toppings.
