- 1/4 cup chia seeds
- 3/4 cup almond milk
- 1/4 teaspoon vanilla extract
- 1 tablespoon honey
- 2 tablespoons shredded coconut
- In a bowl, combine chia seeds, almond milk, vanilla extract and honey.
- Stir until combined and let sit for 10 minutes.
- Stir again then add in the shredded coconut.
- Cover and refrigerate overnight.
- Serve chilled with desired toppings.
