Clams & Mussels i…
Ingredients
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 shallots, chopped
  • 2 tablespoons tomato paste
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon crushed red pepper flakes
  • 3 cups dry white wine
  • 2 pounds clams, scrubbed and rinsed well
  • 2 pounds mussels, scrubbed and de-bearded

Steps
  1. Heat the oil in a large pot over medium heat. Add the garlic and shallots and cook until softened, about 5 minutes.
  2. Add the tomato paste, oregano, thyme and red pepper flakes. Cook for 1 minute.
  3. Add the white wine and bring to a simmer. Simmer for 5 minutes.
  4. Add the clams and mussels to the pot. Cover with a lid and cook until all of the shells have opened, about 8 minutes. Discard any unopened shells.
  5. Serve with crusty bread or your favorite sides.
