Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 cup vegetable oil
  • 2 cups white sugar
  • 3 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 3/4 cup plain yogurt (or sour cream)
  • 1 cup chopped walnuts

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  2. In a medium bowl, mix together the flour, baking powder, baking soda, salt and cinnamon.
  3. In a large bowl, beat together the oil and sugar until well blended.
  4. Add the eggs one at a time, beating well with each addition.
  5. Stir in the vanilla and yogurt.
  6. Mix in the dry ingredients until just blended.
  7. Fold in the walnuts.
  8. Spread batter into prepared pan.
  9. Sprinkle with streusel topping if desired.
  10. Bake for 35 to 40 minutes in the preheated oven. Cake is done when it springs back to the touch.
