- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 3/4 cup vegetable oil
- 2 cups white sugar
- 3 eggs, lightly beaten
- 1 teaspoon vanilla extract
- 3/4 cup plain yogurt (or sour cream)
- 1 cup chopped walnuts
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- In a medium bowl, mix together the flour, baking powder, baking soda, salt and cinnamon.
- In a large bowl, beat together the oil and sugar until well blended.
- Add the eggs one at a time, beating well with each addition.
- Stir in the vanilla and yogurt.
- Mix in the dry ingredients until just blended.
- Fold in the walnuts.
- Spread batter into prepared pan.
- Sprinkle with streusel topping if desired.
- Bake for 35 to 40 minutes in the preheated oven. Cake is done when it springs back to the touch.
