In a medium bowl, whisk together flour, sugar, baking powder, salt, and cinnamon. In a separate bowl, whisk together milk, oil and egg.
Pour wet ingredients into dry ingredients and mix until just combined (a few lumps are ok).
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
