Ingredients
  • 1 can (15 ounces) pumpkin puree
  • 1/2 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon kosher salt
  • 2 large eggs, lightly beaten
  • 3/4 cup half-and-half or whole milk
  • 1 can (12 ounces) evaporated milk

Steps
  1. Preheat oven to 350°F. Grease a 9-inch deep-dish pie plate.
  2. In a medium bowl, stir together the pumpkin puree, brown sugar, cinnamon, ginger, nutmeg and salt.
  3. Add the eggs and stir until blended. Gradually stir in the half-and-half and evaporated milk until smooth.
  4. Pour the mixture into the prepared pie plate.
  5. Bake for 45 minutes or until a knife inserted near the center comes out clean.
  6. Let cool completely before serving.
