- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup butter, melted and cooled
- 3/4 cup milk
- 1 large egg, lightly beaten
- Preheat oven to 375°F. Grease a 12-cup muffin pan.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon and salt.
- In a medium bowl combine melted butter, milk and egg. Add to the dry ingredients and stir until just combined.
- Fill muffin cups about 3/4 full with batter. Sprinkle tops of muffins with additional sugar and cinnamon if desired.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow muffins to cool in pan for 5 minutes before transferring to a wire rack to cool completely.
