Ingredients
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup butter, melted and cooled
  • 3/4 cup milk
  • 1 large egg, lightly beaten

Steps
  1. Preheat oven to 375°F. Grease a 12-cup muffin pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon and salt.
  3. In a medium bowl combine melted butter, milk and egg. Add to the dry ingredients and stir until just combined.
  4. Fill muffin cups about 3/4 full with batter. Sprinkle tops of muffins with additional sugar and cinnamon if desired.
  5. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  6. Allow muffins to cool in pan for 5 minutes before transferring to a wire rack to cool completely.
