Cinnamon Roll Cup…
Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup sour cream or plain yogurt

Steps
  1. Preheat oven to 350°F. Line 12 muffin cups with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder and salt.
  3. In a large bowl with an electric mixer on medium speed, beat the butter and sugar until light and fluffy, about 2 minutes.
  4. Add the eggs one at a time, beating well after each addition. Beat in the vanilla.
  5. With the mixer on low speed, add the dry ingredients in two additions alternating with the sour cream, beginning and ending with dry ingredients.
  6. Fill each liner about two-thirds full with batter. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool in pan for 5 minutes before transferring to wire rack to cool completely.
