- 2 cups cooked white rice
- 1/2 cup diced red onion
- 1/4 cup chopped cilantro
- 1 lime, juiced
- 1 teaspoon olive oil
- Salt and pepper to taste
- In a large bowl, combine cooked rice, red onion, cilantro and lime juice.
- Drizzle with olive oil and season with salt and pepper.
- Toss to combine.
- Serve immediately or chill in the refrigerator for up to 1 hour before serving.
