Ingredients
  • 2 cups cooked white rice
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1 teaspoon olive oil
  • Salt and pepper to taste

  1. In a large bowl, combine cooked rice, red onion, cilantro and lime juice.
  2. Drizzle with olive oil and season with salt and pepper.
  3. Toss to combine.
