- 2 tablespoons olive oil
- 1/2 cup diced onion
- 1 cup long grain white rice
- 2 cups chicken broth
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons freshly squeezed lime juice
- 3 tablespoons chopped fresh cilantro
- Heat the olive oil in a medium saucepan over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the rice and stir to coat with the oil. Cook for 1 minute.
- Add the chicken broth, salt, and pepper. Bring to a boil, reduce heat to low, cover and simmer for 18 minutes.
- Remove from heat and stir in lime juice and cilantro. Cover and let sit for 5 minutes before serving.
