Ingredients
  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons freshly squeezed lime juice
  • 3 tablespoons chopped fresh cilantro

Steps
  1. Heat the olive oil in a medium saucepan over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the rice and stir to coat with the oil. Cook for 1 minute.
  3. Add the chicken broth, salt, and pepper. Bring to a boil, reduce heat to low, cover and simmer for 18 minutes.
  4. Remove from heat and stir in lime juice and cilantro. Cover and let sit for 5 minutes before serving.
