Ingredients
  • 1 cup couscous
  • 1/2 cup vegetable broth
  • 1/4 cup freshly squeezed lime juice
  • 2 tablespoons olive oil
  • 3 tablespoons chopped fresh cilantro leaves
  • 1/4 teaspoon salt
  • 2 tablespoons thinly sliced green onion tops (optional)

Steps
  1. In a medium saucepan, bring the vegetable broth to a boil. Add the couscous and stir to combine. Cover and remove from heat. Let sit for 5 minutes.
  2. Stir in the lime juice, olive oil, cilantro, salt and green onion (if using). Fluff with a fork.
  3. Serve warm or cold.
