- 1 cup couscous
- 1/2 cup vegetable broth
- 1/4 cup freshly squeezed lime juice
- 2 tablespoons olive oil
- 3 tablespoons chopped fresh cilantro leaves
- 1/4 teaspoon salt
- 2 tablespoons thinly sliced green onion tops (optional)
- In a medium saucepan, bring the vegetable broth to a boil. Add the couscous and stir to combine. Cover and remove from heat. Let sit for 5 minutes.
- Stir in the lime juice, olive oil, cilantro, salt and green onion (if using). Fluff with a fork.
- Serve warm or cold.
