- 1 head cauliflower
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup chopped fresh cilantro
- 1/4 teaspoon sea salt
- 2 tablespoons freshly squeezed lime juice
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
- Heat the olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute.
- Add the cauliflower rice and cook for 5 minutes, stirring occasionally.
- Stir in the cilantro, salt, and lime juice. Cook for an additional 2-3 minutes or until desired texture is reached.
- Serve warm.
