Ingredients
  • 1 head cauliflower
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon sea salt
  • 2 tablespoons freshly squeezed lime juice

Steps
  1. Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
  2. Heat the olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute.
  3. Add the cauliflower rice and cook for 5 minutes, stirring occasionally.
  4. Stir in the cilantro, salt, and lime juice. Cook for an additional 2-3 minutes or until desired texture is reached.
  5. Serve warm.
