Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup grated zucchini
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 2 eggs

Steps
  1. Preheat oven to 375°F (190°C). Grease 12 muffin cups or line with paper liners.
  2. In a large bowl, combine flour, brown sugar, cocoa powder, baking powder, baking soda and salt.
  3. In a separate bowl, whisk together zucchini, milk, oil and eggs until blended.
  4. Add wet ingredients to dry ingredients and stir just until moistened.
  5. Divide batter evenly among prepared muffin cups.
  6. Bake for 18 to 20 minutes or until a toothpick inserted in center of muffin comes out clean.
  7. Cool in pan on wire rack for 5 minutes. Remove from pan and let cool completely on wire rack.
