Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup cocoa powder
  • 3/4 cup butter, softened
  • 2 cups packed brown sugar
  • 4 eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour 24 muffin cups.
  2. Sift together the flour, baking powder, baking soda, salt and cocoa powder. Set aside.
  3. In a medium bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time.
  4. Mix in the sour cream and vanilla extract.
  5. Gradually blend in the dry ingredients.
  6. Fill each muffin cup 3/4 full with batter.
  7. Bake for 20 to 25 minutes in preheated oven, or until a toothpick inserted into center of a cupcake comes out clean.
  8. Let cool before frosting with your favorite peanut butter frosting.
